The Ekonomou family established the traditional pasta workshop Thrakiotiki Zimi (“Thracian Dough”) in 2003 in Aegiro, a few kilometres outside Komotini in Thrace, to preserve and spread the recipes and flavours of the rich culinary traditions of Thrace. Located close to the source of its raw materials, the workshop uses pure, fresh ingredients processed with modern equipment — but always following the traditional pasta-making craft of the region and adding no preservatives or artificial flavour improvers.
