George Stefos and his family grew up on the banks of the Messolonghi-Aetoliko lagoon and learned the art of bottarga — grey mullet roe — from the local fishermen of the area. Together with his children, George founded a company in Aetoliko village in 2008 to share the unique products of the Mesolongi lagoon with the world, combining tradition with new technology.
The Messolonghi-Aetoliko lagoon is a national park protected by the Ramsar and Natura 2000 Conventions, lying between the delta of the Acheloos and Evinos rivers in Central Greece. This rich wetland hosts almost 270 species of birds, 36 fish species, 23 species of reptiles, and many mammal species.
