We begin by lighting the fire — a ritual that warms more than just the oven. Under the guidance of our experienced cooks, you’ll learn the art of making traditional Greek bread dough, discovering the secrets of kneading and baking by hand with care and joy. As the dough rises, so does our excitement. While the bread rests and slowly puffs, we take a peaceful walk through our organic vegetable gardens, where you will harvest fresh vegetables and aromatic herbs straight from the source. Along the way, you’ll learn about local varieties, seasonal planting, and the stories behind each ingredient — from centuries-old trees to fragrant plants growing in our soil. By the time we return, the wood-fired oven is hot and ready for the next step in kneading and baking. We shape and bake our bread rolls, their irresistible aroma filling the air, while we move on to the main course: a classic, slow-roasted Greek Ratatouille (Briam) prepared with the vegetables you just gathered. As the dish cooks to perfection, we prepare delicious accompaniments — a rustic village salad bursting with crisp vegetables and a refreshing homemade tzatziki made with creamy Greek yoghurt, garlic, cucumber, and freshly picked herbs.
