George Stefos and his family grew up on the banks of the Messolonghi-Aetoliko lagoon in Central Greece and learned the art of bottarga — or roe — from the fishermen of the area. The bottarga of Stefos, based on a traditional home recipe, was known in a small local circle that appreciated and enjoyed it for decades as both a tasty, nutritious daily food and a precious festive treat.
Together with his children and a group of food technologists and experienced product promotion specialists, George Stefos founded a company in Aetoliko village in 2008 with the vision of sharing the unique products of the Mesolongi lagoon with the world, combining tradition with new technology.
The Sacred City of Mesolongi, proclaimed as such in 1837, is a point of reference in gastronomic tradition, with flavors from the richest fish-producing center of Greece — the lagoon lying between the deltas of the Acheloos and Evinos rivers.
On the waterways of this Central Greece wetland, you will admire the island complex of the lagoon with its picturesque fishermen’s huts, seasonal fowl fauna, and the spectacular sunset. You will experience the harmonious coexistence of human life and the wetland through fishing, and witness the extraordinary biodiversity of the area — a paradise for bird watching enthusiasts.
The visit includes a lagoon boat tour starting from the village of Mesolongi (Tourlida island), Saint Sostis (Faros), Vasiladi, Pelades, and returning to Tourlida island. A traditional lagoon lunch with local cuisine and local ouzo concludes the experience.
