Anhydrous Winery, established in 2021 by Apostolos Mountrichas — the renowned winemaker of Avantis Estate — was born out of his love for Santorini and the remarkable Assyrtiko grape. Mountrichas began his Santorini project in 2012, driven by a philosophy of exploring ancient winemaking techniques to create contemporary wines that showcase the purity of the grapes.
These exceptional wines embody the profound connection to the arid land of Santorini — its volcanic terroir, majestic earth, abundant sunshine, refreshing sea breeze, and the essence of the Cyclades, reflecting the unparalleled PDO terroir of Santorini.
The winery is situated in the picturesque village of Exo Gonia. The Anhydrous Cellar Door visitor centre is conveniently located in Fira, just a 10-minute walk from the city centre, operating from April to October.
This multifunctional venue offers guided winery tours, interactive wine tastings, innovative food-and-wine pairing experiences, lunches at our restaurant, and grape cosmetic sessions. Our wine tourism program has earned a well-deserved place on Santorini’s “must-do” list.

At the Afoura cellar, visitors immerse themselves in Santorini’s traditions, surrounded by clay-maturation amphorae. The Anhydrous Cellar Door offers wine tastings complemented by our kalosorisma dip, or paired with traditional Greek meze appetisers, along with cooking lessons, private wine tastings, and exclusive meals.
Our knowledgeable team of oenologists leads the guided tour, offering insights into viticulture and wine production. The tour culminates in the cellar — where wine ages in “afouras” (the distinctive large Santorini wine storage barrels) and clay amphorae — before guests indulge in wine tasting and have their questions answered.
