San Michali is the only Greek PDO cheese produced exclusively in Syros from cow’s milk. Although it is believed that it is a cheese with a long history, it was actually created only in the early 1970s, by the cheese-maker of the local Cooperative, who was in fact from Mykonos.
Its name comes from a small village, in the north, a rural part of the island, from which it is said that the President of the Cooperative had his origins.
It is true that its particular characteristics differ from the usual graviera of the Eastern Cyclades, and it is perhaps the most expensive cheese. It has a spicy taste and golden skin and matures for 8 months.
