Provatina is the female lamb that has already given birth—thus, one that is not young in age. Very fatty, it is also called “chondro”.
In olden times, it was a favorite meze among butchers, but you could find it only in certain places, because it was considered a cheap, low-quality meat. Today, provatina continues to be inexpensive, but has acquired a good name, finding its way on to the menus of many restaurants.
It can be roasted or cooked in the pot.
