Makarouni skioufichta is a fresh Cretan pasta that housewives prepare at home in the traditional way. The skioufichta or sioufichta pasta, as the dish is locally called, is not made from filo like many other kinds of fresh pasta, but with dough. Skioufichta means “to roll”, thus indicating that the dough is rolled.

Served in a deep dish, hot stakovoutiro is poured over the pasta, which is then sprinkled with grated anthotiro, mizithra or feta and olive oil. The pasta is eaten hot and is served as a side dish for rooster cooked in tomato sauce or boiled goat.

Packaged skioufichta from small local Cretan producers is also found in grocery stores.
