Athens Odeon

From Thrace to Crete and from Ikaria to the Peloponnese, wineries from all over Greece will bring their wines to the historic setting of the Athens Odeon, celebrating the range and character of Greek natural wine. Expect organic, biodynamic wines with minimal sulfites, and native yeasts, unfiltered and unrefined, ready to fill your glasses and share their unique stories. This year, FYSIKA FYSIKA also hosts six wineries from Italy, Serbia, and Georgia—countries rich in natural winemaking traditions.

Throughout the day, attendees can sample over 200 minimally-intervention wines and meet the winemakers behind them. These wines are pure, eco-friendly, and—most importantly—delicious! Joining them at the Athens Conservatory will be “Tromero Paidi” with sourdough breads, “Karamanlidika tou Fani” with a selection of fine cheeses, and Maraboo, offering wine-infused ice cream for dessert.

Natural wines are nurtured in a clean environment, free from additives, synthetic fertilizers, and pesticides, letting the plants and soil thrive naturally. Their production uses minimal or no sulfites, avoids clarifying agents, and relies solely on wild yeasts.

The event’s setup is designed for reusability, made from eco-friendly materials, with no single-use plastics. In 2023, 2,000 glass bottles were recycled, along with composting of 2,120 cigarette butts and 1,400 corks.
