Kokkinisto is a traditional dish of Greek gastronomy. Every home in Greece has a recipe for kokkinisto, being a dish suitable for any time and any day, and satisfying all tastes.
There is a kokkinisto recipe for beef and for chicken. In the former version, veal shoulder is preferred since it contains the fat needed to enhance its flavor. We start by sautéing a mixture of chopped onion, celery and carrot. The meat is then cooked in the same oil over low heat. Salt, pepper and grated tomato in the juice are then added. The kokkinisto is combined with spaghetti, French fries, mashed potatoes, rice, or eggplant puree. It can be served with orzo pasta as giouvetsi.
