Skordalia

Skordalia: Greek garlic dip, mashed potato or bread base, blended with garlic, nuts, olive oil. Perfect with fried fish or vegetables.

Skordalia is a well-known Greek appetizer. Also known as aliada, it is a side-dish similar to mashed potatoes and is prepared by mixing crushed garlic with a thick base of mashed potato (or dried-out bread that has been moistened), walnuts, almonds, and then with olive oil added in order to give it a gentle, creamy texture. Vinegar is often added as well. Variations of the basic recipe, include using eggs to give it an even creamier texture.

Skordalia is usually served with fried fish (typically cod), or fried or boiled vegetables, like eggplant and zucchini.
