Tulumba is a deep-fried dessert soaked in syrup and made from dough which is squeezed through a special nozzle from a pastry bag. The batter is similar to French pâte à choux dough.
The word tulumba literally means a pump in Turkish. Tulumba is made from unleavened dough shaped into a ridged ovoid shape about 3 cm long with ridges. Deep-fried to a golden color, they are then soaked in sugar-sweet syrup while still hot. They are eaten cold.
