The Trinity Farm

Our student years, city life at home and abroad, and growing experience all paved the road back to where it all started: the environs of Agia Triada village, 40 km south of Larissa and 40 km west of Volos, in Thessaly — on a piece of land that has belonged to our family for three generations.

There we embraced the principles of biodynamic agriculture, turning the farmland into a living organism where all animals are fed using the farm’s own products, and the animals, in turn, provide raw materials for nourishing the land.

Today, The Trinity Farm covers about 40 hectares, where we cultivate organic and biodynamic cereal, legumes, and horticultural products approved by Demeter International. The cereal is ground in a stone mill to produce flour for particular types of pasta, while we also maintain a small herd of sheep and some poultry.

The guided farm tour commences with a warm welcome and an introduction to the history and context of the farm. Guests step into the laboratory building for an engaging overview of biodynamic cultivation principles, gaining a deeper understanding of the nutritional essence inherent in biodynamic harvests.

The tour moves through the processing and packaging areas, then reaches the stone mill — where participants explore the significance of whole-grain offerings and the nuanced role of gluten in the farm’s practices.
