Aura Panousopoulou, born in Athens in 1967, left the city in 1993 to embrace rural life and founded her first artisanal food workshop, Yiam, in 1999. By 2002, the workshop relocated to Agia, Larissa, just 30 km from Larissa at the foothills of majestic Kissavos in Thessaly. At Yiam, she creates handmade spoon sweets, rich jams, flavorful sauces, pickled delicacies, and gourmet mezze—all carefully packed in glass jars to preserve purity and taste.
The Kissavos Mountain cooking class takes place in a bright kitchen with large windows opening to a serene walnut orchard. Aura guides participants through an interactive cooking workshop designed for all skill levels, with three spacious workstations and ten gas stoves.
What’s on the Menu? Participants divide into teams to create a Thessalian feast together: Skopelitiki Cheese Pies with Honey; Coleslaw Salad with Fig Dressing (crunchy cabbage, carrots, fresh onions, apples, and walnuts in a fruity vinaigrette); Handmade Egg Tagliatelle; Slow-Cooked Beef Ragout to accompany the homemade tagliatelle; and Playful Profiteroles for dessert.
After the cooking class, a short scenic drive leads to Agia and THE OLD SILK GALLERY—a beautifully restored stone house, once used for silkworm breeding, with exposed wooden ceilings, a cozy fireplace, stunning mosaic floors, and original artwork throughout. Guests gather around two grand monastery-style tables to enjoy the fruits of their labor.
