Arseniko: PDO cheese from Naxos, made from goat’s milk, aged for six months with regular olive oil smears, similar to manouri.

Arseniko (Male cheese)

It is an emblematic cheese of mountainous Naxos, with a Protected Designation of Origin (PDO).
The Arseniko is a cheese-like kefalotiri and is prepared from goat milk, mainly from villages, usually collected in folds of the Mitato village. With the addition of rennet, it gives the manouri cheese, which then drains into wicker baskets. Once the manouri cheese is drained, it is removed from the baskets and placed on boards in a cool and dark place. Six months later, during which there are regular smears with olive oil, the Arseniko is ready to be consumed.
