Karydopita is a pan-baked sweet. Its ingredients include eggs, sugar, semolina, grated rusk, walnuts, baking powder, cloves and lemon or orange zest. After baking, a warm syrup made with sugar, water, lemon juice and cinnamon stick, is poured over it. Cut into oblong pieces, it is sprinkled with grated walnuts and a few chocolate shavings or truffles.
It is served plain or with a scoop of kaimaki ice cream . It can be savored any day of the year in a number of ways: with whipped cream, chocolate icing, chocolate, coffee or caramel, or with honey and lemon.
In the summertime it is kept refrigerated.
