Kofto, unique to Aegean Islands, is a wheat and mizithra cheese dish mashed together, served on New Year’s Eve for good luck in harvest.

Kofto is a dish unique to the Aegean Islands, made from a mixture of wheat and mizithra cheese which, before being boiled, are mashed together in a stone mortar to make a paste.

It is a dish for New Year’s Eve made from simple ingredients produced on the island of Amorgos: flour and mizithra.

Served in the morning, but also on New Year’s eve, it is thought to bring good luck for the harvest of the coming year. The more wheat seeds there are, the better will be the New Year! Also, it is served at the festival of Agia Paraskevi at the village of Kolofana as a first dish before the patatato of Amorgos.
