Description

The history of “Lefkas Earth” began in 2000 when Dimitris Rombotis, a graduate of wine studies, established the first wine cellar in the village of Sivros in South Lefkas. He utilized local varieties and his expertise to achieve high-quality winemaking from the start. Collaborating closely with wine producers in the area, Rombotis obtained top-quality raw materials and facilitated the establishment of new vineyards.

To adapt to modern demands, “Lefkas Earth” constructed a new winery open to the public on the main road of Nydri – Vassiliki, above Sivota. The facility’s design harmonizes with the surrounding terrain, ensuring a successful production line. Winemaking and bottling take place in two large buildings equipped with modern stainless-steel fermentation tanks, temperature control, pre-fermentation tanks, stabilization tanks, a destemmer, and grape-friendly pumps.

Additional features include oak barrels for aging, a quality control laboratory, automatic and semi-automatic bottling equipment, and an air-conditioned cellar for aging the bottled wine. This modernized winery reflects a commitment to tradition, know-how, and the preservation of human history and culture while aiming for ultimate quality.
