Jima is a boutique winery committed to crafting high-quality wines, reflecting their unparalleled terroir and the family’s passion for excellence! The family Panos is a visionary, restless person. DipWSET Chemist, Oenologist with MSc in Food Science and Technology, and student at the Institute of Masters of Wine, London. Kristy is passionate and assertive, a pediatrician at IBCLC specializing in homeopathy and breastfeeding consulting. Vineyards & Wines Five separate blocks comprise the total vineyard area of Jima winery, with Cabernet Franc, Merlot, and Vertzami, while producing limited editions of wines. Each label is a one-off, and the names or the bottle’s artistic decoration change every year while these unique wines age with grace. “Les Vignerons concept” Panos vision is to value and bring the small vine growers (vignerons) of Epirus into the foreground by producing wines under their names, using their grapes, and mentioning the details of their production on the label. Debina and Vlachiko belong to this project.We offer guided tours of the vineyards and the winery. Visitors will be informed about the viticultural techniques we apply, the training system, the pruning philosophy, the soil treatments, and the canopy management. At the winery, they will be informed about our production methods and will visit the wine cellar. A wine tasting concludes the visit.
