Karpouzopita or Karpouzenia

Karpοuzopita (watermelon pie), with its aromatic sweetness, highlights the mornings and evenings on the island of Milos. Watermelon, with its particular delicate taste, dehydrates while it is baked and leads to the condensation of its characteristics. Karpouzopita should be thin, crisp on the top and bottom, and soft in the middle.
This simple summer delicacy, based on watermelon, can be found on many Cycladic islands, but it achieves on Milos a refinement that elevates its reputation to the loftiest heights. Usually served in a triangular shape, it is covered in sesame seeds and infused with the aroma of cinnamon and a touch of honey. Its ingredients are honey, sesame, flour, sugar, cinnamon, and olive oil. There are as many variations as there are kitchens baking them, making them as light and elegant as possible without overpowering the palate.
