At Django Gelato, we craft what we believe to be the purest, healthiest, and most technically refined gelato in the world. If another exists, it can only be equally pure—never more.

Our story began in 2005 on the island of Syros, where we produced classic Italian-style gelato. But everything changed in 2011. Driven by curiosity—and a refusal to compromise—we began a bold research journey with no books, no mentors, and no roadmap. For six years, we rebuilt gelato from the ground up, learning to create it using only natural, unprocessed ingredients, guided solely by science, intuition, and raw experimentation.

Today, real gelato has almost disappeared from the modern world, replaced by shortcuts and artificiality.

We’re proud to revive it.

And now, through our workshops and experiences, we open the doors to this rare craft—sharing the knowledge, artistry, and discipline behind one of gastronomy’s most challenging sciences.
