The story began in 2005 on the island of Syros, producing classic Italian-style gelato. Everything changed in 2011: driven by curiosity and a refusal to compromise, a bold research journey began with no books, no mentors, and no roadmap — six years of rebuilding gelato from the ground up using only natural, unprocessed ingredients, guided by science, intuition, and raw experimentation.
