Greek ‘Soutzouki of Kymi’

Soutzouki of Kymi with walnuts or almonds are a traditional regional sweet offered to the bride by her in-laws. The walnuts or almonds are sewn together by hand, requiring that the kokosses, as the nuts are called in the local dialect, are carefully shelled. The shelled nuts are soaked in water to soften and expand them and are then stitched together with thread. After that, the strand is dipped in moustalevria and hung out to dry. The process is repeated daily until the soutzouki covers the nuts entirely and is thus ready by November.

It is served as a dessert or sliced up in salads.
