Kouloura of Kasos

Similar to the shape of a large koulouri, and made from wholemeal wheat flour, anise, clove, cinnamon, pepper, sesame, yeast, and salt, double-baked as a paximadi, suitable for lunch, coffee, or tea. Because in those years sugar was hard to find, the housewives managed through combinations of spices to achieve a sweet taste.
